Beef Goulash

Ingredients
- 2 lbs beef chuck, cut into cubes
- 2 tbsp vegetable oil
- 2 onions, chopped
- 3 cloves garlic, minced
- 3 tbsp sweet Hungarian paprika
- 1 tbsp tomato paste
- 1 red bell pepper, chopped
- 4 cups beef broth
- 2 potatoes, cut into chunks
- 1 tsp caraway seeds
- 1 bay leaf
- Salt and pepper, to taste
- Sour cream, for serving
Instructions
- 1Pat the beef dry and season with salt and pepper, then heat the oil in a large pot over medium-high heat and brown the beef in batches, about 3 minutes per side, then set aside.
- 2Add the onions to the pot and cook for 8 to 10 minutes, until softened and lightly golden.
- 3Stir in the garlic and cook for 30 seconds, then remove the pot from the heat briefly and stir in the paprika and tomato paste, coating the onions well.
- 4Return the pot to the heat, add the bell pepper, beef broth, caraway seeds, and bay leaf, and return the beef to the pot.
- 5Bring to a simmer, cover, and cook on low heat for 60 minutes, stirring occasionally.
- 6Add the potatoes and continue simmering, covered, for 25 to 30 minutes, until the beef and potatoes are tender.
- 7Remove the bay leaf, season with salt and pepper to taste, and serve with a dollop of sour cream.
