Black Bean Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 3 cans (15 oz each) black beans, drained and rinsed
  • 4 cups vegetable broth
  • 2 tbsp lime juice
  • Salt and pepper, to taste
  • Chopped cilantro, for serving

Instructions

  1. 1Heat the olive oil in a large pot over medium heat and cook the onion and bell pepper for 5 to 6 minutes until softened.
  2. 2Stir in the garlic, cumin, and smoked paprika and cook for 1 minute until fragrant.
  3. 3Add the black beans and vegetable broth, and bring to a boil.
  4. 4Reduce the heat and simmer for 15 to 20 minutes to let the flavors meld.
  5. 5Puree about half of the soup with an immersion blender, leaving the rest chunky, for a creamy but textured consistency.
  6. 6Stir in the lime juice, season with salt and pepper to taste, and serve topped with chopped cilantro.
