Cabbage Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/2 head green cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. 1Heat the olive oil in a large pot over medium heat and cook the onion, carrots, and celery for 6 to 8 minutes until softened.
  2. 2Stir in the garlic and paprika and cook for 30 seconds until fragrant.
  3. 3Add the cabbage and cook for 3 to 4 minutes, stirring, until it begins to wilt slightly.
  4. 4Pour in the diced tomatoes and vegetable broth, add the bay leaf, and bring the pot to a boil.
  5. 5Reduce the heat and simmer for 20 to 25 minutes, until the cabbage and carrots are tender.
  6. 6Remove the bay leaf, season with salt and pepper to taste, and serve hot.
