French Onion Soup

Ingredients
- 4 tbsp butter
- 4 large onions, thinly sliced
- 1 tsp sugar
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 6 cups beef broth
- 1 bay leaf
- 1 tsp fresh thyme leaves
- Salt and pepper, to taste
- 4 slices baguette, toasted
- 1 1/2 cups shredded Gruyere cheese
Instructions
- 1Melt the butter in a large pot over medium heat, add the onions and sugar, and cook, stirring occasionally, for 35 to 40 minutes, until deeply golden and caramelized.
- 2Stir in the garlic and cook for 1 minute until fragrant.
- 3Pour in the white wine, scraping up any browned bits from the bottom of the pot, and let it simmer for 2 minutes.
- 4Add the beef broth, bay leaf, and thyme, and bring to a simmer, then cook for 20 minutes to let the flavors meld.
- 5Remove the bay leaf and season with salt and pepper to taste.
- 6Ladle the soup into oven-safe bowls, top each with a toasted baguette slice and a generous handful of Gruyere cheese.
- 7Place the bowls under a broiler for 2 to 3 minutes, until the cheese is melted and bubbling, then serve immediately.
