Leftover Turkey Soup

Ingredients
- 2 tbsp butter
- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups turkey or chicken broth
- 2 cups leftover cooked turkey, shredded or chopped
- 1 1/2 cups egg noodles or wide pasta
- 1 tsp dried sage
- 1 bay leaf
- Salt and pepper, to taste
Instructions
- 1Melt the butter in a large pot over medium heat and cook the onion, carrots, and celery for 6 to 8 minutes until softened.
- 2Stir in the garlic and cook for 30 seconds until fragrant.
- 3Pour in the broth, add the sage and bay leaf, and bring the pot to a boil.
- 4Reduce the heat and simmer for 10 minutes to let the vegetables soften further.
- 5Add the noodles and cook for 7 to 8 minutes, or until just tender.
- 6Stir in the leftover turkey and simmer for 2 to 3 minutes until heated through.
- 7Remove the bay leaf, season with salt and pepper to taste, and serve hot.
