Pumpkin Soup

Ingredients
- 2 tbsp butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (29 oz) pure pumpkin puree
- 4 cups vegetable broth
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- Pinch of nutmeg
- 1/2 cup heavy cream
- Salt and pepper, to taste
- Toasted pumpkin seeds, for serving
Instructions
- 1Melt the butter in a large pot over medium heat and cook the onion for 5 minutes until softened.
- 2Stir in the garlic and cook for 30 seconds until fragrant.
- 3Add the pumpkin puree, vegetable broth, cinnamon, ginger, and nutmeg, whisking until smooth, and bring to a simmer.
- 4Cook for 15 minutes, stirring occasionally, to let the flavors develop.
- 5Stir in the heavy cream and warm through over low heat without boiling.
- 6Season with salt and pepper to taste and serve topped with toasted pumpkin seeds.
