Split Pea Soup with Ham

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 lb dried split peas, rinsed
- 1 leftover ham bone or 2 cups diced ham
- 7 cups chicken broth
- 1 bay leaf
- 1/2 tsp dried thyme
- Salt and pepper, to taste
Instructions
- 1Heat the olive oil in a large pot over medium heat and cook the onion, carrots, and celery for 6 to 8 minutes until softened.
- 2Stir in the garlic and cook for 30 seconds until fragrant.
- 3Add the split peas, ham bone or diced ham, chicken broth, bay leaf, and thyme, and bring to a boil.
- 4Reduce the heat and simmer, partially covered, for 60 minutes, stirring occasionally, until the peas have broken down into a thick soup.
- 5If using a ham bone, remove it, shred any meat from it, and stir the meat back into the soup, discarding the bone.
- 6Remove the bay leaf, season with salt and pepper to taste, and serve hot.
