Caprese Tomato and Mozzarella Skillet

Ingredients

  • 2 tbsp olive oil, divided
  • 4 cloves garlic, sliced
  • 4 cups cherry or grape tomatoes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 8 oz fresh mozzarella pearls or cubed mozzarella
  • 1/4 cup fresh basil leaves, torn
  • 1 tbsp balsamic glaze, for drizzling
  • Crusty bread, for serving

Instructions

  1. 1Heat 1 tablespoon of the olive oil in a large skillet over medium heat and cook the garlic for about 1 minute until fragrant but not browned.
  2. 2Add the tomatoes, salt, pepper, and oregano, and cook for 8 to 10 minutes, stirring occasionally, until the tomatoes soften and begin to burst and release their juices.
  3. 3Reduce the heat to low and nestle the mozzarella pieces into the tomatoes.
  4. 4Cover and cook for 2 to 3 minutes, just until the cheese begins to soften and turn glossy; take care not to let it fully melt into the sauce.
  5. 5Remove from the heat, drizzle with the remaining olive oil and the balsamic glaze, and scatter the fresh basil on top.
  6. 6Serve straight from the skillet with crusty bread for dipping.
