Mushroom and Walnut Veggie Burgers

Ingredients
- 1 tbsp olive oil
- 8 oz mushrooms, finely chopped
- 1/2 onion, finely diced
- 2 cloves garlic, minced
- 3/4 cup walnuts, finely chopped
- 1 cup cooked brown rice
- 1/2 cup breadcrumbs
- 1 egg
- 1 tbsp soy sauce
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 2 tbsp vegetable oil, for cooking
- 4 burger buns and toppings, for serving
Instructions
- 1Heat the olive oil in a skillet over medium heat and cook the mushrooms and onion for 6 to 8 minutes, stirring occasionally, until the mushrooms release their liquid and it evaporates; add the garlic and cook for 30 seconds more.
- 2Transfer the mushroom mixture to a large bowl and let cool slightly.
- 3Stir in the walnuts, rice, breadcrumbs, egg, soy sauce, and smoked paprika, and season with salt and pepper.
- 4Mix well and shape into 4 patties, pressing firmly so they hold together.
- 5Heat the vegetable oil in a skillet over medium heat and cook the patties for 4 to 5 minutes per side, until golden brown and firm to the touch.
- 6Serve on toasted buns with your favorite toppings.
