Peanut Sauce Vegetable Stir-Fry Bowl

Ingredients

  • 2 tbsp vegetable oil
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1/3 cup peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1/2 cup warm water
  • Cooked rice, for serving
  • Chopped peanuts and cilantro, for garnish

Instructions

  1. 1Heat the vegetable oil in a large skillet or wok over medium-high heat and stir-fry the broccoli, bell pepper, carrot, and snap peas for 5 to 6 minutes until crisp-tender.
  2. 2Add the garlic and cook for 30 seconds until fragrant.
  3. 3Whisk together the peanut butter, soy sauce, rice vinegar, honey, and warm water until smooth.
  4. 4Pour the peanut sauce over the vegetables and toss to coat, simmering for 2 minutes until slightly thickened.
  5. 5Spoon over bowls of rice and top with chopped peanuts and cilantro before serving.
