Sesame Vegetable Stir-Fry

Ingredients
- 2 tbsp vegetable oil
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 carrot, thinly sliced
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp honey or brown sugar
- 1 tsp sesame oil
- 1 tbsp toasted sesame seeds
- Cooked rice, for serving
Instructions
- 1Heat the vegetable oil in a large wok or skillet over high heat until shimmering.
- 2Add the broccoli, bell pepper, snap peas, and carrot, and stir-fry for 4 to 5 minutes until crisp-tender and lightly charred in spots.
- 3Add the garlic and ginger and cook for 30 seconds until fragrant.
- 4Whisk together the soy sauce, rice vinegar, honey, and sesame oil, then pour over the vegetables.
- 5Toss to coat and cook for 1 to 2 minutes, until the sauce thickens slightly and coats the vegetables.
- 6Sprinkle with sesame seeds and serve hot over rice.
