Veggie Quesadillas

Ingredients
- 1 tbsp olive oil
- 1 bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 1/2 tsp ground cumin
- Salt and black pepper, to taste
- 4 large flour tortillas
- 2 cups shredded Monterey Jack or cheddar cheese
- Salsa and sour cream, for serving
Instructions
- 1Heat the olive oil in a skillet over medium heat and cook the bell pepper, onion, and mushrooms for 5 to 6 minutes until softened and lightly browned.
- 2Add the spinach and cumin, and cook for 1 to 2 minutes until the spinach wilts; season with salt and pepper, then transfer the filling to a plate.
- 3Wipe out the skillet and place one tortilla in it over medium heat.
- 4Sprinkle a quarter of the cheese over half of the tortilla, top with a portion of the vegetable filling, and sprinkle with a little more cheese.
- 5Fold the tortilla over and cook for 2 to 3 minutes per side, pressing gently, until golden and the cheese has melted.
- 6Repeat with the remaining tortillas and filling, then slice each quesadilla into wedges.
- 7Serve hot with salsa and sour cream.
