Veggie Quesadillas

Ingredients

  • 1 tbsp olive oil
  • 1 bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste
  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack or cheddar cheese
  • Salsa and sour cream, for serving

Instructions

  1. 1Heat the olive oil in a skillet over medium heat and cook the bell pepper, onion, and mushrooms for 5 to 6 minutes until softened and lightly browned.
  2. 2Add the spinach and cumin, and cook for 1 to 2 minutes until the spinach wilts; season with salt and pepper, then transfer the filling to a plate.
  3. 3Wipe out the skillet and place one tortilla in it over medium heat.
  4. 4Sprinkle a quarter of the cheese over half of the tortilla, top with a portion of the vegetable filling, and sprinkle with a little more cheese.
  5. 5Fold the tortilla over and cook for 2 to 3 minutes per side, pressing gently, until golden and the cheese has melted.
  6. 6Repeat with the remaining tortillas and filling, then slice each quesadilla into wedges.
  7. 7Serve hot with salsa and sour cream.
