Ingredients

  • 3 cups all-purpose flour
  • 1 egg
  • 1 lb ground beef or lamb
  • 2 onions, finely chopped, divided
  • 1 tsp cumin
  • 2 cups plain yogurt
  • 2 cloves garlic, minced
  • 1 cup split yellow peas or lentils, cooked (for sauce)
  • 2 tomatoes, chopped
  • 2 tbsp dried mint
  • Salt and pepper, to taste

Instructions

  1. 1Knead flour, egg, salt, and water into a firm dough; rest 30 minutes and roll thin, cutting into squares.
  2. 2Mix ground meat with half the chopped onions, cumin, salt, and pepper for the filling.
  3. 3Place a spoonful of filling on each dough square and fold into small pouches, pinching the top closed.
  4. 4Steam the mantu in a greased steamer basket for 20-25 minutes until the dough is cooked through.
  5. 5Simmer the remaining onions and tomatoes with the cooked split peas into a thin tomato-lentil sauce.
  6. 6Whisk yogurt with garlic and salt.
  7. 7Plate the steamed mantu topped with the tomato-lentil sauce, garlic yogurt, and dried mint.
