Trinxat (Cabbage and Potato Cake)

Ingredients
- 4 large potatoes, peeled and cubed
- 1 small green cabbage, shredded
- 6 oz cured bacon or pork belly, diced
- 4 cloves garlic, sliced
- 3 tbsp olive oil or lard
- Salt and pepper to taste
Instructions
- 1Boil the potatoes and shredded cabbage together in salted water until both are very tender, about 20 minutes.
- 2Drain thoroughly and mash the potatoes and cabbage together with a fork, keeping some texture.
- 3In a heavy skillet, render the diced bacon over medium heat until crisp, then remove and set aside, leaving the fat in the pan.
- 4Fry the garlic slices in the rendered fat until golden and fragrant, then remove and reserve.
- 5Season the mashed potato and cabbage mixture with salt and pepper, then press it into the hot skillet to form a flat cake.
- 6Cook until a deep golden crust forms on the bottom, about 8 minutes, then carefully flip and brown the other side.
- 7Slide the trinxat onto a plate and top with the crisped bacon and fried garlic before serving.
