Antiguan Saltfish with Onions and Peppers

Ingredients

  • 1 lb salted cod, soaked overnight and drained
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, minced (seeds removed for less heat)
  • 3 tbsp vegetable oil
  • 1/4 tsp black pepper
  • Fried plantain or bread for serving

Instructions

  1. 1Soak the salted cod in cold water overnight, changing the water once or twice, then drain and rinse well.
  2. 2Simmer the cod in fresh water for 10 minutes to remove excess salt, then drain, cool, and flake it into pieces, discarding any bones or skin.
  3. 3Heat oil in a skillet and sauté the onion, garlic, and scotch bonnet pepper until fragrant.
  4. 4Add the sliced bell peppers and cook until they begin to soften.
  5. 5Stir in the chopped tomatoes and cook until they break down into a light sauce.
  6. 6Add the flaked saltfish to the pan and toss gently to combine with the vegetables.
  7. 7Season with black pepper and cook for another 5 minutes until heated through.
  8. 8Serve hot with fried plantain, bread, or johnnycakes.
