Bajan Fish Cakes

Ingredients
- 1/2 lb salted cod, soaked and desalted
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 onion, finely chopped
- 2 scallions, chopped
- 1 scotch bonnet pepper, minced
- 2 cloves garlic, minced
- 1 tsp fresh thyme
- 1 egg
- 3/4 cup water
- Vegetable oil for frying
- Salt and black pepper to taste
Instructions
- 1Soak the salted cod overnight, changing the water, then boil for 10 minutes and flake finely, removing bones and skin.
- 2Whisk flour, baking powder, egg, and water into a thick batter.
- 3Fold in the flaked fish, onion, scallions, scotch bonnet, garlic, and thyme, and season with black pepper.
- 4Heat oil to 350F in a deep skillet.
- 5Drop spoonfuls of the batter into the hot oil and fry for 3-4 minutes, turning once, until golden and cooked through.
- 6Drain on paper towels.
- 7Serve hot with pepper sauce, a classic Bajan snack.
