Ingredients
- 4 green plantains, peeled
- 2 ripe plantains, peeled
- 2 lbs white fish fillets
- 1 (14 oz) can coconut milk
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 sprig fresh thyme
- Salt and black pepper, to taste
Instructions
- 1Boil the green and ripe plantains together until very soft, about 20 minutes.
- 2Mash the boiled plantains together in a large mortar until smooth and stretchy, forming the hudut.
- 3Season the fish with salt and pepper.
- 4Sauté onion, bell pepper, garlic, and tomato in a pot until softened.
- 5Add coconut milk and thyme, bring to a simmer, and add the fish.
- 6Simmer 12-15 minutes until the fish is cooked through and the broth is fragrant.
- 7Serve the coconut fish stew alongside a mound of hudut for dipping.
