Ingredients

  • 4 green plantains, peeled
  • 2 ripe plantains, peeled
  • 2 lbs white fish fillets
  • 1 (14 oz) can coconut milk
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1 sprig fresh thyme
  • Salt and black pepper, to taste

Instructions

  1. 1Boil the green and ripe plantains together until very soft, about 20 minutes.
  2. 2Mash the boiled plantains together in a large mortar until smooth and stretchy, forming the hudut.
  3. 3Season the fish with salt and pepper.
  4. 4Sauté onion, bell pepper, garlic, and tomato in a pot until softened.
  5. 5Add coconut milk and thyme, bring to a simmer, and add the fish.
  6. 6Simmer 12-15 minutes until the fish is cooked through and the broth is fragrant.
  7. 7Serve the coconut fish stew alongside a mound of hudut for dipping.
