Wagasi with Vegetable Sauce

Ingredients
- 1 lb wagasi cheese, cubed
- 2 tomatoes, chopped
- 1 onion, sliced
- 2 cups spinach or amaranth greens, chopped
- 1 scotch bonnet pepper, minced
- 3 tbsp palm oil
- 1/2 cup ground peanuts
- Seasoning cubes, to taste
Instructions
- 1Heat palm oil in a skillet and lightly fry the wagasi cubes until golden on the edges; set aside.
- 2In the same pan, sauté onion until soft, then add tomatoes and scotch bonnet and cook until saucy.
- 3Stir in ground peanuts and a splash of water to loosen the sauce, simmering 5 minutes.
- 4Add the chopped greens and cook until just wilted.
- 5Return the fried wagasi to the pan and toss gently to coat in the sauce.
- 6Season with seasoning cubes and serve hot with rice or pâte.
