Ingredients
- 8-10 green chilies, sliced lengthwise
- 2 tomatoes, chopped
- 1 onion, sliced
- 2 cups datshi (Bhutanese cheese) or a mix of cheddar and farmer cheese
- 2 tbsp butter
- 1/2 cup water
- Salt, to taste
Instructions
- 1Combine the sliced green chilies, tomatoes, and onion in a pot with water and butter.
- 2Bring to a simmer and cook until the chilies begin to soften, about 8-10 minutes.
- 3Add the cheese and stir gently as it begins to melt into the vegetables.
- 4Continue simmering on low heat, stirring occasionally, until the sauce is thick and creamy and the chilies are tender, about 8-10 minutes more.
- 5Season with salt to taste.
- 6Serve hot with a generous portion of red rice.
