Bogobe (Botswanan Sorghum Porridge)

Ingredients

  • 2 cups sorghum meal
  • 6 cups water
  • Pinch of salt
  • 1 cup sour milk or maas (optional, for bogobe ba lerotse)

Instructions

  1. 1Mix a cup of the sorghum meal with a cup of cold water to make a slurry.
  2. 2Bring the remaining water to a boil with a pinch of salt.
  3. 3Stir the slurry into the boiling water, whisking to avoid lumps.
  4. 4Reduce heat and simmer, stirring frequently, for 30-35 minutes, gradually adding the remaining sorghum meal until thick and smooth.
  5. 5If making the soured version, stir in sour milk once the porridge has cooled slightly.
  6. 6Serve warm as a breakfast porridge or alongside a meat stew.
