Ndolé (Cameroonian Bitterleaf and Peanut Stew)

Ingredients

  • 4 cups ndole (bitterleaf) or substitute spinach, washed and chopped
  • 1 lb beef, cubed
  • 1/2 lb dried shrimp, ground
  • 1 1/2 cups raw peanuts, ground into a paste
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup palm oil
  • 2 stock cubes
  • Salt to taste

Instructions

  1. 1If using true bitterleaf, boil and rinse it several times to remove bitterness, then chop finely.
  2. 2Season and boil the beef with onion and garlic until tender, reserving the cooking stock.
  3. 3Whisk the ground peanuts with some of the reserved stock until smooth.
  4. 4Heat palm oil in a large pot and add the peanut paste, stirring constantly to prevent burning.
  5. 5Add the ground dried shrimp and stock cubes and simmer 10 minutes.
  6. 6Stir in the cooked beef and greens and add more stock as needed to reach a thick, stew-like consistency.
  7. 7Simmer 20-25 minutes, stirring occasionally, until well combined and rich.
  8. 8Season with salt and serve with boiled plantains or rice.
