Ingredients

  • 2 lbs russet potatoes, cut into fries
  • Vegetable oil, for frying
  • 2 cups cheese curds
  • 2 cups beef stock
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper, to taste

Instructions

  1. 1Soak the cut fries in cold water 30 minutes, then dry thoroughly.
  2. 2Fry the potatoes twice: once at 325°F until soft, then again at 375°F until golden and crisp.
  3. 3Melt butter in a saucepan and whisk in flour to make a roux.
  4. 4Whisk in beef stock and Worcestershire sauce, and simmer until thickened into a gravy.
  5. 5Season the gravy with salt and pepper.
  6. 6Pile the hot fries onto plates, scatter cheese curds over the top, and ladle hot gravy over everything.
  7. 7Serve immediately while the curds are still slightly melty.
