Ingredients

  • 2 lb beef or goat, cubed
  • 1 cup ground raw peanuts
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, minced
  • 2 tbsp oil
  • 2 cups water or stock
  • Salt to taste

Instructions

  1. 1Heat oil in a pot and brown the meat on all sides.
  2. 2Add onion and garlic and cook until softened.
  3. 3Add tomatoes and scotch bonnet and cook until the tomatoes break down.
  4. 4Pour in water or stock, cover, and simmer 35-40 minutes until the meat is tender.
  5. 5Whisk in the ground peanuts to thicken the sauce.
  6. 6Simmer uncovered 10-15 more minutes, stirring occasionally, until rich and thick.
  7. 7Season with salt and serve with rice or fufu.
