Kanda ti Nyama (Central African Peanut Meat Stew)

Ingredients
- 2 lb beef or goat, cubed
- 1 cup ground raw peanuts
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, minced
- 2 tbsp oil
- 2 cups water or stock
- Salt to taste
Instructions
- 1Heat oil in a pot and brown the meat on all sides.
- 2Add onion and garlic and cook until softened.
- 3Add tomatoes and scotch bonnet and cook until the tomatoes break down.
- 4Pour in water or stock, cover, and simmer 35-40 minutes until the meat is tender.
- 5Whisk in the ground peanuts to thicken the sauce.
- 6Simmer uncovered 10-15 more minutes, stirring occasionally, until rich and thick.
- 7Season with salt and serve with rice or fufu.
