Ingredients
- 2 cups white rice
- 2 cups coconut milk
- 1/2 cup grated coconut, toasted until dark and dry (titoté)
- 1/4 cup raisins
- 1 teaspoon sugar
- Salt, to taste
Instructions
- 1Simmer the coconut milk in a pot until the oil separates and the solids turn deep golden brown (titoté), stirring frequently.
- 2Add the toasted grated coconut, sugar, and salt to the titoté.
- 3Stir in the rice and enough water to cook it, about 2 1/2 cups.
- 4Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until the rice is tender.
- 5Fold in the raisins during the last 5 minutes of cooking.
- 6Fluff with a fork and serve alongside fried fish or coastal seafood dishes.
