Ingredients

  • 2 cups white rice
  • 2 cups coconut milk
  • 1/2 cup grated coconut, toasted until dark and dry (titoté)
  • 1/4 cup raisins
  • 1 teaspoon sugar
  • Salt, to taste

Instructions

  1. 1Simmer the coconut milk in a pot until the oil separates and the solids turn deep golden brown (titoté), stirring frequently.
  2. 2Add the toasted grated coconut, sugar, and salt to the titoté.
  3. 3Stir in the rice and enough water to cook it, about 2 1/2 cups.
  4. 4Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until the rice is tender.
  5. 5Fold in the raisins during the last 5 minutes of cooking.
  6. 6Fluff with a fork and serve alongside fried fish or coastal seafood dishes.
