Ingredients
- 3 lbs bone-in chicken pieces (or a mix of chicken and beef)
- 2 ears corn, cut into thirds
- 2 green plantains, cut into chunks
- 3 yuca (cassava) roots, peeled and cut into chunks
- 2 potatoes, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bunch cilantro
- 10 cups water or broth
- Salt and pepper, to taste
- Cooked white rice and avocado, for serving
Instructions
- 1Place the chicken, onion, garlic, and half the cilantro in a large pot with water; bring to a boil.
- 2Reduce heat and simmer for 25 minutes, skimming any foam.
- 3Add the yuca and green plantain and simmer for 20 minutes.
- 4Add the potatoes and corn and continue simmering for 20-25 minutes until all vegetables are tender.
- 5Season with salt and pepper, and stir in the remaining fresh cilantro.
- 6Serve hot in large bowls with rice and avocado on the side.
