Comorian Ladu (Coconut Sesame Sweets)

Ingredients
- 2 cups shredded coconut
- 1 cup sesame seeds, toasted
- 1 cup sugar
- 1/2 cup water
- 1 tsp ground cardamom
- 1 tbsp ghee, plus more for shaping
Instructions
- 1Toast the sesame seeds in a dry pan over medium heat until golden and fragrant, then set aside.
- 2In a saucepan, combine sugar and water, cooking over medium heat until it forms a thick syrup, about 8-10 minutes.
- 3Stir the shredded coconut into the syrup and cook, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
- 4Add most of the toasted sesame seeds and the ground cardamom, mixing thoroughly.
- 5Remove from heat and let the mixture cool just enough to handle.
- 6Grease your hands lightly with ghee and roll the warm mixture into small balls.
- 7Roll each ball in the remaining sesame seeds to coat.
- 8Let the ladu cool completely and firm up before serving or storing in an airtight container.
