Ingredients
- 3 cups basmati rice
- 500g beef or chicken, cut into pieces
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 cinnamon stick
- 3 cloves
- 1 tsp ground cardamom
- 1/4 cup ghee or vegetable oil
- 4 cups beef or chicken stock
- Salt to taste
Instructions
- 1Rinse the rice thoroughly and set aside to drain.
- 2Heat ghee in a large pot and brown the meat pieces on all sides.
- 3Add the sliced onion, garlic, and ginger, cooking until the onion is soft and golden.
- 4Stir in the cinnamon stick, cloves, and cardamom, toasting briefly until fragrant.
- 5Add the rice to the pot and stir to coat each grain in the spiced oil.
- 6Pour in the stock, season with salt, and bring to a boil.
- 7Reduce heat to low, cover tightly, and cook for 20-25 minutes until the rice is tender and the liquid is fully absorbed.
- 8Fluff gently with a fork before serving hot.
