Ingredients
- 3 lb mixed river fish (carp, catfish, pike), cut into pieces
- 2 onions, finely diced
- 3 tbsp sweet paprika
- 1 tsp hot paprika
- 2 tbsp lard or oil
- 8 cups water or fish stock
- Salt
- Thin homemade noodles, for serving
Instructions
- 1Simmer fish heads and trimmings in water for 30 minutes to build a stock, then strain.
- 2Sauté the onions in lard until soft, remove from heat, and stir in sweet and hot paprika.
- 3Combine the paprika onions with the strained stock and bring to a gentle simmer.
- 4Add the fish pieces and cook gently 15-20 minutes without stirring too vigorously, until just cooked through.
- 5Season with salt to taste; the stew should be fiery red and slightly thickened.
- 6Serve hot, ladled over thin egg noodles.
