Ingredients

  • 1 cup dried red beans, soaked overnight
  • 2 cups long-grain rice
  • 4 oz salt pork or bacon, diced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 bay leaf
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. 1Cook the soaked beans in fresh water until tender, about 45 minutes, reserving the cooking liquid.
  2. 2In a heavy pot, render the salt pork until crisp, then saute onion, bell pepper, and garlic in the fat.
  3. 3Stir in cumin and bay leaf, then add the cooked beans with about 4 cups of their liquid, adding water if needed.
  4. 4Bring to a boil, stir in the rice, and season with salt and pepper.
  5. 5Reduce heat to low, cover tightly, and simmer 20-25 minutes until liquid is absorbed and rice is tender.
  6. 6Let rest 5 minutes, then fluff and remove bay leaf before serving.
