Czech Bramboráky (Potato Pancakes)

Ingredients

  • 1 kg potatoes, peeled and grated
  • 2 eggs
  • 3 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 1 tsp marjoram
  • 1/2 tsp caraway seeds
  • Vegetable oil, for frying
  • Salt and black pepper to taste

Instructions

  1. 1Grate the potatoes finely and squeeze out as much excess liquid as possible using a clean kitchen towel.
  2. 2In a large bowl, combine the grated potatoes with eggs, garlic, flour, marjoram, caraway seeds, salt, and pepper, mixing until you have a thick, cohesive batter.
  3. 3Heat a generous layer of vegetable oil in a large skillet over medium heat.
  4. 4Spoon portions of the batter into the pan, flattening each into a thin round pancake.
  5. 5Fry for 3-4 minutes per side until deeply golden brown and crisp at the edges, with the potato cooked through.
  6. 6Drain on paper towels and keep warm while frying the remaining batter.
  7. 7Serve hot on their own, or with a dollop of sour cream or a bowl of goulash for dipping.
