Ingredients

  • 1/2 lb salted cod, soaked and desalted
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp sugar
  • 1/2 tsp salt
  • 3/4 cup warm water
  • 1 tbsp butter, softened
  • Vegetable oil for frying
  • 1 onion, sliced
  • 1 tomato, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, minced

Instructions

  1. 1Whisk flour, baking powder, sugar, and salt, then rub in butter and stir in warm water to form a soft dough; let rest 20 minutes.
  2. 2Divide the dough into balls and flatten into rounds about 1/2 inch thick.
  3. 3Heat oil in a skillet and fry the dough rounds for 3-4 minutes per side until golden and cooked through; drain.
  4. 4Soak the salted cod overnight, then simmer 10 minutes and flake, removing skin and bones.
  5. 5Saute onion, garlic, tomato, and scotch bonnet pepper in a little oil, then stir in the flaked saltfish and cook 5-7 minutes.
  6. 6Serve the fried bakes split open and filled with the seasoned saltfish, or on the side.
