Ingredients
- 2 cups white rice
- 1 cup dried red beans (or 2 cans, drained)
- 1.5 lbs beef or chicken, stewed
- 1 onion, chopped, divided
- 4 cloves garlic, minced, divided
- 1 green bell pepper, chopped
- 1 (8 oz) can tomato sauce
- 1 tsp oregano
- 3 tbsp vegetable oil, divided
- Salt and black pepper to taste
- Green salad and fried sweet plantains, for serving
Instructions
- 1Cook the beans (soaked overnight if dried) in water until tender, then set aside with some cooking liquid.
- 2Season the beef or chicken with half the garlic, salt, and pepper, and stew in a pot with a little oil and water until tender, about 40 minutes.
- 3In a separate pot, saute half the onion, remaining garlic, and bell pepper in oil, then add the beans with some liquid, tomato sauce, and oregano, and simmer 15 minutes into a thick guiso.
- 4Cook the rice separately in a pot with water, salt, and a little oil until fluffy.
- 5Arrange the rice, beans, and stewed meat together on a plate like a flag.
- 6Serve with a side salad and sweet fried plantains.
