Ingredients

  • 2 cups white rice
  • 1 cup dried red beans (or 2 cans, drained)
  • 1.5 lbs beef or chicken, stewed
  • 1 onion, chopped, divided
  • 4 cloves garlic, minced, divided
  • 1 green bell pepper, chopped
  • 1 (8 oz) can tomato sauce
  • 1 tsp oregano
  • 3 tbsp vegetable oil, divided
  • Salt and black pepper to taste
  • Green salad and fried sweet plantains, for serving

Instructions

  1. 1Cook the beans (soaked overnight if dried) in water until tender, then set aside with some cooking liquid.
  2. 2Season the beef or chicken with half the garlic, salt, and pepper, and stew in a pot with a little oil and water until tender, about 40 minutes.
  3. 3In a separate pot, saute half the onion, remaining garlic, and bell pepper in oil, then add the beans with some liquid, tomato sauce, and oregano, and simmer 15 minutes into a thick guiso.
  4. 4Cook the rice separately in a pot with water, salt, and a little oil until fluffy.
  5. 5Arrange the rice, beans, and stewed meat together on a plate like a flag.
  6. 6Serve with a side salad and sweet fried plantains.
