Ingredients
- 3 lbs beef tripe and cow foot, cleaned
- 2 ears corn, cut into chunks
- 1 yuca root, peeled and cubed
- 1 chayote, cubed
- 1 green plantain, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 bunch cilantro
- Salt and black pepper, to taste
- Lime wedges, for serving
Instructions
- 1Simmer the tripe and cow foot in a large pot of water for 2-2 1/2 hours, until tender, skimming as needed.
- 2Cut the cooked tripe and meat from the foot into bite-sized pieces.
- 3Sauté onion and garlic, then stir in tomato sauce and add to the pot with the broth.
- 4Add corn, yuca, chayote, and plantain, and simmer 30-40 minutes until tender.
- 5Return the cut tripe and meat to the pot and simmer 10 more minutes.
- 6Stir in chopped cilantro and season with salt and pepper.
- 7Serve hot with lime wedges.
