Ingredients
- 2 lb firm white fish, cut into chunks
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 scotch bonnet peppers, minced
- 1 tbsp grated ginger
- 3 cloves garlic, minced
- 4 cups fish or vegetable stock
- Salt to taste
Instructions
- 1Combine onion, tomatoes, scotch bonnet, ginger, and garlic in a pot with the stock.
- 2Bring to a boil and simmer 10 minutes to build the broth flavor.
- 3Add the fish chunks and reduce heat to a gentle simmer.
- 4Cook 12-15 minutes until the fish is just cooked through and tender.
- 5Season with salt to taste.
- 6Serve the hot, spicy soup in bowls as a starter or light main.
