Ingredients

  • 2 lb firm white fish, cut into chunks
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 scotch bonnet peppers, minced
  • 1 tbsp grated ginger
  • 3 cloves garlic, minced
  • 4 cups fish or vegetable stock
  • Salt to taste

Instructions

  1. 1Combine onion, tomatoes, scotch bonnet, ginger, and garlic in a pot with the stock.
  2. 2Bring to a boil and simmer 10 minutes to build the broth flavor.
  3. 3Add the fish chunks and reduce heat to a gentle simmer.
  4. 4Cook 12-15 minutes until the fish is just cooked through and tender.
  5. 5Season with salt to taste.
  6. 6Serve the hot, spicy soup in bowls as a starter or light main.
