Grenadian Saltfish Souse

Ingredients

  • 1 lb salted cod, soaked and desalted
  • 1 cucumber, sliced
  • 1 onion, thinly sliced
  • 1 scotch bonnet pepper, minced
  • Juice of 4 limes
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Chopped parsley, for garnish

Instructions

  1. 1Soak the salted cod overnight in several changes of water, then simmer in fresh water for 10-12 minutes until tender.
  2. 2Drain and flake the fish, removing skin and bones.
  3. 3Combine the flaked fish with cucumber, onion, and scotch bonnet pepper in a bowl.
  4. 4Pour lime juice and olive oil over the mixture and toss well.
  5. 5Season with black pepper and let marinate at least 30 minutes in the refrigerator.
  6. 6Garnish with chopped parsley before serving.
  7. 7Serve chilled as a light lunch or appetizer.
