Ingredients

  • 4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 cup warm milk
  • 1/4 cup sugar, plus more for coating
  • 2 eggs
  • 4 tbsp melted butter, plus more for brushing
  • 1/2 tsp salt
  • 1 cup ground walnuts or cinnamon sugar, for coating

Instructions

  1. 1Dissolve yeast and a pinch of sugar in warm milk and let sit 10 minutes until foamy.
  2. 2Mix in flour, remaining sugar, eggs, melted butter, and salt, and knead into a smooth, elastic dough.
  3. 3Let the dough rise 1 hour until doubled.
  4. 4Roll the dough into long ropes and wind each rope spiral-fashion around a floured wooden cylindrical spit.
  5. 5Roll each wrapped spit in sugar to coat, then cook over hot coals or under a broiler, turning constantly, until golden and caramelized.
  6. 6Brush with melted butter while hot and roll in ground walnuts or cinnamon sugar.
  7. 7Slide off the spit and let cool slightly before serving.
