Ingredients

  • 1 large head cabbage, plus extra sauerkraut for layering
  • 1 lb ground pork
  • 1/2 cup rice, parboiled
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp sweet paprika
  • Salt and black pepper
  • 2 cups sauerkraut
  • 1 (14 oz) can crushed tomatoes
  • 1 cup sour cream
  • 1 tbsp flour

Instructions

  1. 1Core and blanch the cabbage, peeling off leaves as they soften.
  2. 2Mix ground pork, parboiled rice, onion, garlic, paprika, salt, and pepper for the filling.
  3. 3Place a spoonful of filling on each cabbage leaf, fold in the sides, and roll up tightly.
  4. 4Line a pot with sauerkraut, arrange the cabbage rolls on top, and cover with more sauerkraut and crushed tomatoes.
  5. 5Add enough water to nearly cover, then simmer covered for 75-90 minutes.
  6. 6Whisk flour into sour cream and stir into the pot for the last 10 minutes to thicken the sauce.
  7. 7Serve the rolls hot with the sauerkraut and sauce spooned over.
