Chicken Biryani

Ingredients
- 3 cups basmati rice, soaked 30 minutes
- 2 lbs chicken, bone-in pieces
- 1 cup yogurt
- 2 onions, thinly sliced and fried until crisp
- 2 tbsp ginger-garlic paste
- 2 tsp biryani masala
- 1 tsp red chili powder
- 1/2 cup mint leaves, chopped
- 1/2 cup cilantro, chopped
- 4 green cardamom pods
- 2 bay leaves
- 1 cinnamon stick
- Pinch of saffron soaked in 3 tbsp warm milk
- 4 tbsp ghee
- Salt, to taste
Instructions
- 1Marinate chicken in yogurt, ginger-garlic paste, biryani masala, chili powder, and salt for at least 1 hour.
- 2Parboil the soaked rice with whole spices and salt until 70% cooked, then drain.
- 3Layer half the marinated chicken in a heavy pot, top with half the rice, then repeat with remaining chicken and rice.
- 4Scatter fried onions, mint, cilantro, and saffron milk over the top layer.
- 5Drizzle with ghee, cover tightly with foil and a lid, and cook on low heat (dum) for 30-35 minutes.
- 6Let rest 10 minutes off heat before gently fluffing and serving.
