Chole Bhature

Ingredients
- 2 cups chickpeas, soaked overnight and boiled
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 2 tsp chole masala
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 2 cups all-purpose flour
- 1/4 cup yogurt
- 1/2 tsp baking powder
- Oil, for frying and cooking
- Salt, to taste
Instructions
- 1Knead flour, yogurt, baking powder, salt, and a little oil with water into a soft dough; rest 2 hours.
- 2Heat oil, sizzle cumin seeds, then sauté onions until golden.
- 3Add ginger-garlic paste, tomato puree, chole masala, and turmeric; cook until oil separates.
- 4Add boiled chickpeas with some cooking liquid and simmer 20 minutes until thick, mashing a few chickpeas for body.
- 5Divide the rested dough into balls, roll into ovals, and deep-fry in hot oil until puffed and golden (bhature).
- 6Serve the hot chickpea curry alongside the fried bhature.
