Nasi Goreng (Indonesian Fried Rice)

Ingredients
- 4 cups day-old cooked rice
- 2 eggs
- 1/2 lb chicken breast, diced
- 3 shallots, sliced
- 3 cloves garlic, minced
- 2 tbsp kecap manis (sweet soy sauce)
- 1 tbsp shrimp paste (terasi)
- 3 red chilies
- 1/4 cup frozen peas
- Fried shallots and cucumber slices, for garnish
- Prawn crackers, for serving
Instructions
- 1Blend shallots, garlic, chilies, and shrimp paste into a rough paste.
- 2Fry the spice paste in oil until fragrant.
- 3Add diced chicken and cook until no longer pink.
- 4Push the chicken aside, crack in the eggs, and scramble until just set, then mix together.
- 5Add the day-old rice, breaking up clumps, and stir-fry until well combined and heated through.
- 6Stir in kecap manis and peas, tossing until evenly coated and glossy.
- 7Top with fried shallots, cucumber slices, and serve with prawn crackers.
