Ingredients

  • 6 eggs
  • 3 cups mixed fresh herbs (parsley, cilantro, dill, chives), finely chopped
  • 1/4 cup walnuts, chopped
  • 2 tbsp barberries
  • 1 tbsp flour
  • 1/2 tsp turmeric
  • 1/2 tsp baking powder
  • 3 tbsp oil
  • Salt and pepper, to taste

Instructions

  1. 1Whisk the eggs with flour, turmeric, baking powder, salt, and pepper.
  2. 2Fold in the finely chopped herbs, walnuts, and barberries until evenly distributed.
  3. 3Heat oil in an oven-safe or nonstick skillet over medium heat.
  4. 4Pour in the egg-herb mixture and spread evenly.
  5. 5Cook covered on low heat until the bottom is set and golden, then flip (or finish under a broiler) to cook the top through, about 15-20 minutes total.
  6. 6Cut into wedges and serve warm or at room temperature with flatbread and yogurt.
