Ingredients

  • 30 grape leaves
  • 2 zucchini, hollowed
  • 2 bell peppers, hollowed
  • 2 tomatoes, hollowed
  • 1.5 cups short-grain rice
  • 1/2 lb ground lamb
  • 2 tbsp tomato paste
  • 1 tsp baharat
  • 1/2 cup pomegranate molasses
  • 3 tbsp oil
  • Salt and pepper, to taste

Instructions

  1. 1Mix rice, ground lamb, tomato paste, baharat, salt, and pepper for the filling.
  2. 2Stuff the hollowed zucchini, peppers, and tomatoes with the filling, leaving room for the rice to expand.
  3. 3Wrap smaller portions of filling in grape leaves, rolling tightly.
  4. 4Layer the stuffed vegetables and grape leaf rolls in a large pot, packing tightly.
  5. 5Mix pomegranate molasses, oil, and water, and pour over the dolma to just cover.
  6. 6Weigh down with a plate, cover, and simmer on low heat for 50-60 minutes until the rice and vegetables are tender.
