Jamaican Curry Goat

Ingredients

  • 3 lbs goat meat, bone-in, cut into chunks
  • 3 tbsp Jamaican curry powder
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 scotch bonnet pepper, whole
  • 2 scallions, chopped
  • 1 tbsp fresh thyme
  • 3 tbsp vegetable oil
  • 2 potatoes, peeled and cubed
  • 2 cups water or stock
  • Salt and black pepper to taste

Instructions

  1. 1Toss the goat meat with 2 tablespoons curry powder, salt, and pepper, and marinate at least 2 hours or overnight.
  2. 2Heat oil in a heavy pot and bloom the remaining curry powder for 30 seconds until fragrant.
  3. 3Add the marinated goat and sear on all sides.
  4. 4Add onion, garlic, scallions, thyme, and the whole scotch bonnet pepper, stirring well.
  5. 5Pour in water, bring to a boil, then reduce heat, cover, and simmer 1 to 1.5 hours until the goat is tender.
  6. 6Add the potatoes during the last 25 minutes of cooking.
  7. 7Uncover and simmer until the gravy thickens slightly.
  8. 8Serve hot over white rice.
