Ingredients

  • 4 whole red snapper or fish steaks
  • 1 tbsp all-purpose seasoning
  • Vegetable oil for frying
  • 1 cup white vinegar
  • 1 carrot, julienned
  • 1 chayote, julienned (optional)
  • 1 onion, sliced into rings
  • 1 scotch bonnet pepper, sliced into rings
  • 1 red bell pepper, sliced
  • 1 tsp allspice berries
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. 1Score the fish and season with salt and all-purpose seasoning; let sit 20 minutes.
  2. 2Heat oil in a large skillet and fry the fish until golden and crisp on both sides, about 6-8 minutes per side; drain and set aside.
  3. 3In a saucepan, combine vinegar, carrot, chayote, onion, scotch bonnet, bell pepper, allspice, sugar, and salt.
  4. 4Bring to a boil, then simmer 5 minutes until the vegetables slightly soften but remain crisp.
  5. 5Pour the hot pickled vegetables and vinegar over the fried fish.
  6. 6Let marinate at least 1 hour before serving, at room temperature or chilled.
