Miso Ramen

Ingredients
- 4 servings fresh ramen noodles
- 6 cups chicken or pork stock
- 4 tbsp red or white miso paste
- 2 tbsp sesame paste
- 1 tbsp grated garlic
- 1 tbsp grated ginger
- 1 tbsp doubanjiang or chili paste
- 1/2 lb ground pork
- 2 tbsp butter
- 1 cup bean sprouts
- 1 cup corn kernels
- 4 soft-boiled eggs, halved
- 2 scallions, sliced
Instructions
- 1Stir-fry ground pork in a splash of oil until browned and crumbly, then set aside.
- 2Whisk miso paste, sesame paste, garlic, ginger, and chili paste together in each serving bowl.
- 3Bring the stock to a simmer and ladle a portion into each bowl, whisking to dissolve the miso mixture.
- 4Cook the ramen noodles until just tender and divide among the bowls.
- 5Top each bowl with the cooked pork, bean sprouts, and corn.
- 6Add a pat of butter to each bowl and top with an egg half and scallions.
- 7Serve immediately while piping hot.
