Ingredients
- 2 cups dried chickpeas, soaked overnight (not cooked)
- 1 onion, chopped
- 4 cloves garlic
- 1 cup chopped parsley
- 1 cup chopped cilantro
- 1 tsp cumin
- 1 tsp coriander powder
- 1/2 tsp baking soda
- 1 tbsp sesame seeds
- Oil for deep frying
Instructions
- 1Drain the soaked chickpeas well and pulse them in a food processor with onion, garlic, parsley, and cilantro until finely ground but not pureed.
- 2Add cumin, coriander, salt, and pepper, pulsing again to combine evenly.
- 3Cover and refrigerate the mixture for at least 30 minutes to firm up.
- 4Just before frying, mix in the baking soda and sesame seeds.
- 5Shape the mixture into small patties or balls using a scoop or your hands.
- 6Heat oil to about 175°C (350°F) and fry the falafel in batches until deep golden brown and crisp on the outside.
- 7Drain on paper towels.
- 8Serve hot in pita bread with tahini sauce, pickles, and fresh salad.
