Ingredients
- 3 cups long-grain rice, soaked
- 2 lbs lamb, cubed
- 2 onions, sliced
- 3 carrots, julienned
- 1 head garlic, halved crosswise
- 1 tsp cumin seeds
- 1/2 cup oil
- Salt and pepper, to taste
Instructions
- 1Heat oil in a large heavy pot and brown the lamb cubes on all sides.
- 2Add onions and cook until softened, then layer in the julienned carrots without stirring and cook a few minutes.
- 3Add cumin seeds, salt, pepper, and enough water to just cover the meat and carrots; simmer 30 minutes.
- 4Spread the soaked rice evenly over the meat mixture and add water to sit about an inch above the rice.
- 5Bury the garlic head halves into the rice, cover, and simmer on low heat until the rice is tender and the liquid is absorbed, about 25 minutes.
- 6Gently mix everything together before serving on a large communal platter.
