Babai Taro Mash

Ingredients
- 1kg babai (giant swamp taro) or regular taro, peeled and chunked
- 1 cup coconut cream
- 1/2 tsp salt
- 2 tbsp coconut oil
- Toasted grated coconut for garnish (optional)
Instructions
- 1Peel and cut the babai or taro into even chunks.
- 2Place the chunks in a large pot of water and bring to a boil.
- 3Cook until completely tender when pierced with a fork, about 30-40 minutes depending on size.
- 4Drain the cooked taro thoroughly.
- 5Mash the taro with coconut oil and salt until mostly smooth, leaving some texture.
- 6Fold in the coconut cream until the mash is rich and creamy.
- 7Adjust salt to taste.
- 8Serve warm, garnished with toasted grated coconut if desired, alongside fish or meat.
