Ingredients
- 4 cups all-purpose flour
- 2 cups water
- 1 tsp salt
- 1 cup sour cream, thinned with a little milk
- 1 cup melted butter or oil
- 1 tsp baking powder (optional, for a lighter texture)
Instructions
- 1Mix flour, water, and salt into a thin, pourable batter, similar to a crepe batter.
- 2Preheat a special flija dome (saç) or a heavy oven-safe pan with a curved lid over hot coals or in an oven.
- 3Brush the hot cooking surface with melted butter, then pour a thin layer of batter over it and cover to cook briefly.
- 4Once the first layer sets, brush with more butter or thinned sour cream, then pour another thin layer of batter directly over the top.
- 5Cover and cook again, repeating the process layer by layer, brushing with butter or cream between each addition.
- 6Continue building up 15-20 thin layers, cooking each briefly before adding the next, until a tall, ridged, golden-brown dome forms.
- 7Allow the final layer to cook through completely and develop a deep golden crust on top.
- 8Cut into wedges and serve warm, traditionally with yogurt on the side.
