Ingredients
- 1 cup fine bulgur wheat
- 1 lb ground lamb, divided
- 1 onion, grated
- 1 tsp ground allspice
- 1/2 tsp cinnamon
- Salt and pepper, to taste
- 2 tbsp pine nuts
- 1 small onion, finely diced (for filling)
- 2 tbsp olive oil
- Neutral oil, for frying
Instructions
- 1Soak bulgur in water for 15 minutes, then drain and squeeze dry.
- 2Blend bulgur with half the meat, the grated onion, allspice, cinnamon, salt, and pepper into a smooth paste for the shell.
- 3Sauté the diced onion in olive oil until soft, then add the remaining meat and pine nuts and cook until browned, for the filling.
- 4Shape the shell mixture into small oval shells, hollow the center, and stuff with the filling, sealing the ends.
- 5Heat oil to 350°F and fry the kibbeh in batches until deep golden brown, 4-5 minutes.
- 6Drain on paper towels and serve hot with yogurt.
